Grana Padano PDO announces its partnership with the eighth annual Identità Golose, the acclaimed chefs conference bringing Michelin-starred legends from around the world to convene for three days only, from October 10th-October 12th, at Eataly Flatiron and Eataly Downtown in New York City (www.eataly.com).
As one of the event’s original sponsors, Grana Padano PDO is proud to continue support of Identità Golose’s commitment to Italian culinary traditions, as well as its celebration of emerging food practices and innovations. Given the current climate of food, the theme of Identità Golose will again be “Don’t Waste the Planet: Truth in the Dish” resulting in cooking demonstrations showcasing dishes that combat waste by using resourceful practices, and discussions about how to make today’s global culinary trends and techniques more sustainable.
The quintessential Italian cheese and most popular in its home country, Grana Padano PDO will be prevalent throughout the Identità Golose NYC celebrations. Chef participants will utilize and highlight Grana Padano PDO in their recipes throughout the three days in informative “Master Classes” as well as a second-annual “Dine Around” dinner experience, where six chefs will showcase dishes in a culinary tour that will move from restaurant to restaurant within Eataly. Additionally, a ceremonial “wheel-cracking” event will take place on Wednesday 10/11 at Eataly Downtown with cheese monger Lou di Palo demonstrating the opening of a wheel of Grana Padano Riserva.
During the Dine-Around dinner, Chef Corrado Scaglione will prepare Pizza with ancient tomato, eggplant, pecorino, Grana Padano PDO 18 months foam, basil, garlic and oregano; and Chef Virgilio Martinez will pair Grana Padano PDO with High Altitude Grains highlighting the ingredient in multiple ways showcasing Grana Padano’s versatile salty and sweet flavors, and delicious melting quality while addressing the conference’s theme of food waste.
