Whey starter is a liquid obtained from the spontaneous fermentation of cooked whey.
It is obtained from the previous day’s cheese-making  left-over whey and is used to transform milk into cheese.

Whey starter is a liquid with a very high lactic ferment content, which triggers the transformation process from milk to cheese.

It is obtained from the previous day's cheese-making and is added to the partially skimmed milk.
