Grana Padano Puffed rind bites with ricotta and honey

Gone are the days where you would through away the left-over rind of Grana Padano cheese, I give you my word! There is so much you can do with it that to threw it away would be a senseless shame. From smoky BBQ crostini to simply chucking it into sauce or soup for extra deliciousness, the rind of Grana Padano cheese can definitely work as flavour bomb in your favour. Today we explore perhaps what it would be the most fun way to use it, and that would be to make puffed bites in the microwave. You won’t believe how easy it is and it only takes 1 minute. Crispy, gluten free cheesy crostini that could be enjoyed as croutons or as a base for a posh canapé!
Chef’s tip: Store the puffed rind crostini in an airtight box or a sealed bag for up to 2 weeks. The following recipe works well even with a fig or fruit relish.


250 g of Grana Padano rind
120 g of fresh full fat cream cheese
50 g of grated Grana Padano cheese
50 g of honey
Black pepper


With a wet cloth polish the outer part of the cheese rind. You can even use the back of a knife to scrape a very thin outer layer of rind.
Place the rind onto a microwave safe dish layered with backing parchment and ‘bake’ for 1 minute and half at maximum power. The rind should have puffed by now, at least doubled in size, and be nice and golden, if not, continue to cook by steps of 30 seconds until it does. If it browns to much in some areas don’t worry as it can be removed with a paring knife. Let the puffed rind cool on a rack or on a kitchen towel and check the crispiness. If there are chewy areas they can be removed with a paring knife. You can now cut the rind into little crostini as you please.
With a help of a piping bag or simply 2 little spoons, spread a little cream cheese on the crostini and top each one with a drizzle of honey. Sprinkle with a little grated Grana Padano and season with freshly ground black pepper.
