Barley, tuna, red beans, basil and Grana Padano salad
Ingredients200 g pearl barley
100 g tuna in olive oil, drained
80 g Grana Padano PDO over 16 months
230 g red beans
1 bunch basil
1 bunch chives
extra virgin olive oil
PreparationBoil the pearl barley in plenty of salted water, drain and rinse under cold water to cool.
Place the barley in a bowl, add the drained tuna, beans, grated Grana Padano, chopped chives and basil leaves, season with extra virgin olive oil and salt to taste.
Serve cold, adding freshly ground black pepper.
