Barley Salad with Vegetables, Smoked Salmon and Grana Padano
Ingredients
250 g barley
100 g smoked salmon
150 g Grana Padano
100 g grape tomatoes
50 g cooked sweetcorn
50 g olives
50 g petit pois
extra virgin olive oil
basil
salt & pepperPreparation
Cook the barley in plenty of salted boiling water, then drain well and set aside to cool.
Transfer to a bowl, add the vegetables, sliced salmon, shavings of Grana Padano cheese and basil leaves; dress with olive oil, season with salt and pepper then mix well.
Serve the salad cold, garnished with shaved petals of Grana Padano.
