    Fried chicken nuggets with popcorn and Grana Padano

    • 400 g chicken breast
    • 100 g Grana Padano
    • 100 g corn kernels
    • 100 g cornmeal
    • 100 g flour
    • 1 egg
    • Extra virgin olive oil
    • Vegetable oil for frying
    • Salt & pepper



    STEP 1

    Make popcorn by heating two spoonfuls of olive oil in a pan, add the corn kernels and cover with a lid. Cook over high heat until all the corn has popped. Season with salt and pepper, add half of the finely grated Grana Padano and mix.

    STEP 2

    In a bowl, mix the cornmeal with the remaining grated Grana Padano. Dice the chicken, dip it first in beaten egg and then in the cornmeal and Grana Padano mix.

    STEP 3

    Fry the chicken nuggets in plenty of moderately hot vegetable oil until golden. Remove from the oil and season with salt and pepper. Fill paper cones with popcorn and chicken bites and serve immediately.
