    Ingredients

    • 80g sushi rice or basmati rice
    • 100g fresh salmon fillet
    • 50g edamame
    • 1/2 avocado
    • 1/2 cucumber
    • 1 carrot
    • 2 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • Lime juice to taste
    • 1 teaspoon sesame seeds
    • 30g Grana Padano PDO shavings

    Preparation

    STEP 1

    For the rice:
    Cook the rice according to the package instructions, ensuring you get a slightly sticky consistency. Once cooked, let it cool and season it with a mix of soy sauce and sesame oil.

    STEP 2

    For the seasoning: 
    Cut the fresh salmon fillet into cubes and marinate it for a few minutes with soy sauce
    and lime juice. Peel and slice the avocado, cucumber, and carrot into thin strips.

    STEP 3

    For assembly:
    In a large bowl, arrange the rice as a base and add the ingredients in sections:
    salmon, edamame, avocado, cucumber, and carrots. Finish with the
    Grana Padano PDO shavings, a sprinkle of sesame seeds, and, if desired, a drizzle of soy sauce.
