Ingredients
Black rice (Venere rice), 300 g
Fresh sashimi-grade tuna, 300 g
Shelled edamame beans, 150 g
Ripe avocado, 1
Grana Padano PDO, shaved, 60 g
Radishes, 6–8
Sesame seeds, 1 tablespoon
Soy sauce, 3 tablespoons
Sesame oil, 1 tablespoon
Lime, 1
Chives or spring onion, to taste

Preparation
Step 1
Rinse the black rice under running water and cook it in salted water according to the packet instructions. Once cooked, drain and leave to cool.
Step 2
Thinly slice the radishes. In a bowl, mix the rice vinegar, sugar and salt, then add the radishes and leave to marinate for around 10 minutes.
Step 3
Blanch the edamame in lightly salted water for a few minutes, then drain and leave to cool.
Step 4
Cut the fresh tuna into even cubes and season with soy sauce, sesame oil and a few drops of lime juice. Mix gently.
Step 5
Peel the avocado, remove the stone and slice or dice it. Drizzle with a little lime juice to prevent it from browning.
Step 6
Divide the black rice between the bowls. Add the marinated tuna, edamame, avocado and sweet and sour radishes.
Step 7
Finish with shavings of Grana Padano PDO, sesame seeds and a sprinkling of chopped chives or spring onion. Serve immediately and enjoy your poke bowl.
