Ricotta ravioli with fava beans and Grana Padano Riserva

500 g fresh fava beans in the pods
100 g Grana Padano Riserva
400 g pastry flour
4 eggs
250 g ricotta
2 lemons
1 white onion
chives

STEP 1
To make the ravioli, knead the flour with 4 eggs in a stand mixer. When the dough is smooth and evenly mixed, wrap it in cling-film and let it rest in the refrigerator for at least one hour.
STEP 2
Prepare the filling by mixing the ricotta with lemon zest, grated Grana Padano Riserva, salt and pepper.
Roll the dough into two sheets and add small spoonfuls of the ricotta filling on one sheet of dough, then cover with the other sheet and use a pastry wheel to cut into even squares.>
STEP 3
Cook the ravioli in boiling water for 2-3 minutes.
STEP 4
In the meantime, brown the chopped onion in a non-stick pan with a drizzle of oil and the shelled fava beans for a few minutes. Add the drained ravioli and stir.
STEP 5
Serve with grated Grana Padano Riserva and chives.
