Savoury Shortbread with Herbs and Grana Padano Riserva

Ingredients200 g (7.5 oz) Grana Padano Riserva
200 g (7.5 oz) all-purpose flour
200 g (7.5 oz) salted butter
1 sprig thyme
1 sprig rosemary
1 bunch sage
PreparationIn a bowl, combine the flour, softened butter, finely grated Grana Padano Riserva and chopped herbs.
Mix with a fork and then knead with your hands, until the dough is smooth and uniform.
Form the dough into a ball, cover with plastic wrap and set it aside to rest in the refrigerator for 30 minutes.
Roll out the dough with a rolling pin, cut into biscuits using a pastry cutter and arrange on a baking sheet lined with baking paper.
Pierce the surface of the shortbread with a fork and bake in a preheated oven at 180° C (255 °F) for 15-20 minutes, until golden.
Serve the shortbread biscuits cold with onion jam.
