Il latte proviene solo ed esclusivamente dalle <strong>zone di produzione<\/strong> definite dal Disciplinare di produzione.<\/p>\n<p>Le vacche sono munte due volte al giorno oppure sono munte con accesso libero ad un sistema automatico di mungitura, rispettoso delle caratteristiche del latte. Il latte deve essere parzialmente decremato mediante affioramento naturale, a temperatura compresa tra 8 e 20\u00b0C. Quindi il formaggio Grana Padano \u00e8 prodotto da latte crudo, a cui viene aggiunto il caglio, il lisozima e infine il sale.<\/p>\n<p>L\u2019insilamento \u00e8 una tecnica tradizionale di conservazione dei foraggi tipica di molte zone della <strong>Pianura Padana<\/strong>, impiegata principalmente per le piante intere di mais trinciate e immesse in sili verticali o in apposite trincee dove, a seguito di adeguata compressione e isolamento dall\u2019aria, si creano le condizioni per una naturale acidificazione. Si ottiene cos\u00ec un prodotto leggermente acidulo di alto valore alimentare, molto gradito alle mucche.<\/p>\n<p>Nella preparazione degli alimenti conservati, fieni o insilati, un aspetto critico \u00e8 la possibile contaminazione con terreno che pu\u00f2 contenere batteri quali il Clostridium tyrobutirricum.<\/p>\n<p>Questi batteri nell\u2019insilato possono trovare le condizioni favorevoli per moltiplicarsi e dal foraggio contaminare l\u2019ambiente della stalla e passare nel latte.<\/p>\n<\/div>\n<\/div>\n<p>Tutto il latte destinato al <strong>latte fresco<\/strong>, anche quello di alta qualit\u00e0, o a formaggi molli \u00e8 prodotto da bovine alimentate anche con insilati, ma i clostridi hanno bisogno di tempo per maturare per cui nel latte fresco o nei formaggi molli non hanno il tempo di svilupparsi.<\/p>\n<p>Il latte per la produzione del Grana Padano DOP \u00e8 <strong>parzialmente decremato per affioramento naturale<\/strong> del grasso e durante questo processo gran parte dei Clostridi vengono eliminati, ma una certa quota di questi microrganismi potrebbero rimanere nel latte e trovare nel tempo le condizioni per svilupparsi e dare, dopo un lasso di tempo, origine a fermentazioni anomale che compromettono la corretta maturazione del formaggio durante la fase si stagionatura.<\/p>\n<p>Per controllare gli effetti dello sviluppo del Clostridium tyrobutirricum viene aggiunto nel latte, assieme al caglio, il <strong>lisozima<\/strong>, una proteina naturalmente presente in elevata quantit\u00e0 nel latte di donna, nelle lacrime e nella saliva umana ed estratto dall\u2019albume dell\u2019uovo di gallina che pure ne contiene adeguata quantit\u00e0.<\/p>\n<p>Quindi il lisozima \u00e8 impiegato nella produzione di vari formaggi stagionati per controllare le fermentazioni indesiderate e la sua attivit\u00e0 \u00e8 assimilabile a quella di un \u201cmodulatore dei processi fermentativi\u201d inibendo lo sviluppo dei clostridi.<\/p>\n<p>Il lisozima \u00e8 utilizzato anche nella produzione di alcune tipologie di vino e birra.<br \/>Il lisozima \u00e8 una <strong>proteina naturale<\/strong> estratta tal quale dall\u2019albume dell\u2019uovo con metodi meccanici e non chimici.<br \/>Perch\u00e9 non si corrono rischi assumendo il formaggio Grana Padano DOP contenente il lisozima:<\/p>\n<p>&#8211; Il quantitativo di lisozima \u00e8 di massimo 25 grammi per 1000 litri di latte.
