Le degr\u00e9 d&#8217;affinage n&#8217;est donc pas le seul param\u00e8tre qui diff\u00e9rencie notre fromage mais aussi sa zone de production.<br \/>\nBien que les processus de production et les \u00e9quipements utilis\u00e9s dans les \u00e9tables et les fromageries soient identiques et que tous les producteurs soient tenus de respecter un cahier des charges unique et strict, avec une zone de production aussi \u00e9tendue, les caract\u00e9ristiques typiques et l&#8217;identit\u00e9 du \u00ab Grana Padano AOP \u00bb ne sont pas vraiment homog\u00e8nes et uniformes ; par cons\u00e9quent, le go\u00fbt et la structure du fromage ne sont pas standardis\u00e9s sur des crit\u00e8res communs \u00e0 toutes les provinces.<br \/>\nPour pouvoir proc\u00e9der \u00e0 une d\u00e9gustation horizontale, il faut le m\u00eame affinage de Grana Padano AOP mais produit par des fromageries de diff\u00e9rentes r\u00e9gions. Il est ainsi possible de comprendre dans quelle mesure le go\u00fbt final est influenc\u00e9 par les conditions climatiques, la structure du sol, le milieu environnant, le type d&#8217;alimentation et les races bovines utilis\u00e9es pour la production de lait. Le climat de la <strong>Lombardie<\/strong>, bien que pouvant \u00eatre d\u00e9fini de semi-continental, est tr\u00e8s vari\u00e9 en raison des diff\u00e9rentes conformations naturelles du territoire : montagnes, collines, lacs et plaines. Dans les plaines, le climat est de type continental avec des hivers froids et des jours de gel fr\u00e9quents, un brouillard \u00e9pais et des \u00e9t\u00e9s chauds, humides, lourds et mod\u00e9r\u00e9ment pluvieux. Les temp\u00e9ratures pendant cette p\u00e9riode d\u00e9passent 30\u00b0C et le taux d\u2019humidit\u00e9 peut d\u00e9passer 90 %. La vall\u00e9e du P\u00f4 est l&#8217;une des r\u00e9gions les moins ventil\u00e9es d&#8217;Europe. Par contre, les r\u00e9gions limitrophes des grands lacs ont un climat doux, plus proche du climat m\u00e9diterran\u00e9en que du climat continental, avec des hivers moins froids et des \u00e9t\u00e9s chauds mais plus ventil\u00e9s. On constate plut\u00f4t une transition entre le climat semi-continental et celui alpin dans le <strong>Trentin<\/strong>. Bien qu\u2019une grande partie de son territoire se trouve \u00e0 une altitude moyenne assez \u00e9lev\u00e9e, il n&#8217;a pas la rigidit\u00e9 typique d\u2019autres r\u00e9gions alpines. Parmi ses caract\u00e9ristiques, il faut souligner l&#8217;absence absolue de brouillard et une faible humidit\u00e9 atmosph\u00e9rique, qui assurent un climat sensiblement sec. Principalement subcontinental, le climat de l\u2019<strong>\u00c9milie-Romagne<\/strong> pr\u00e9sente des diff\u00e9rences consid\u00e9rables. R\u00e9gion moyennement ventil\u00e9e \u00e0 cause de l&#8217;influence des courants occidentaux qui cr\u00e9ent les conditions pour de courtes p\u00e9riodes relativement douces. Dans l&#8217;ensemble, les pr\u00e9cipitations se concentrent au printemps et en automne \u00e0 des niveaux inf\u00e9rieurs par rapport \u00e0 des r\u00e9gions situ\u00e9es au nord du P\u00f4. Deux climats r\u00e8gnent dans cette r\u00e9gion, celui du P\u00f4 et celui montagneux, le premier ayant des caract\u00e9ristiques continentales, tandis que le second a toutes les caract\u00e9ristiques du climat des Apennins. La <strong>V\u00e9n\u00e9tie<\/strong> conna\u00eet elle aussi une vari\u00e9t\u00e9 de conditions climatiques. Sur ce territoire s\u2019alternent des zones montagneuses au climat rigoureux et aux temp\u00e9ratures tombant abondamment au-dessous de z\u00e9ro en hiver, et les zones douces de la cha\u00eene de montagnes, expos\u00e9e au sud et prot\u00e9g\u00e9e au nord par la cha\u00eene des Pr\u00e9alpes. Le climat de la plaine v\u00e9nitienne, bien que plus doux que celui des autres r\u00e9gions de la vall\u00e9e du P\u00f4, est l\u00e9g\u00e8rement att\u00e9nu\u00e9 par l\u2019Adriatique. De consid\u00e9rables \u00e9carts de temp\u00e9rature pendant la nuit sont une caract\u00e9ristique dominante dans toute la r\u00e9gion. Au <strong>Pi\u00e9mont<\/strong>, en particulier dans la r\u00e9gion de Coni, le climat pr\u00e9sente des caract\u00e9ristiques assez marqu\u00e9es de continentalit\u00e9, d\u00e9termin\u00e9es par l&#8217;\u00e9cran form\u00e9 par les reliefs contre les influences de la M\u00e9diterran\u00e9e voisine. L\u2019altitude diff\u00e9rente de la province d\u00e9termine des diff\u00e9rences climatiques consid\u00e9rables entre la zone alpine, les Langhe et la plaine.<\/p>\n<p>[\/et_pb_accordion_item][et_pb_accordion_item title=&#8221;L&#8217;alimentation des vaches&#8221; _builder_version=&#8221;4.20.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221; open=&#8221;off&#8221;]<\/p>\n<p>De toute \u00e9vidence, nous sommes face \u00e0 un panorama climatique tr\u00e8s diversifi\u00e9 qui, avec la conformation du territoire, influence fortement le type de cultures fourrag\u00e8res \u00e0 la base de l&#8217;alimentation du b\u00e9tail qui produit le lait pour le Grana Padano AOP.<br \/>L\u2019apport diff\u00e9rent de composants dans la ration alimentaire d\u00e9termine la couleur, l&#8217;odeur, la texture, le go\u00fbt du fromage et s&#8217;il convient ou non \u00e0 un affinage long.<br \/>Les provinces de <strong>Brescia<\/strong>, <strong>Bergame<\/strong> et <strong>Cr\u00e9mone<\/strong> sont traditionnellement vou\u00e9es \u00e0 la production de ma\u00efs ; les terres utilis\u00e9es pour les p\u00e2turages et les prairies sont bien plus restreintes que dans d&#8217;autres provinces. Il en r\u00e9sulte une production de Grana Padano AOP \u00e0 l&#8217;ar\u00f4me et au go\u00fbt plus d\u00e9licats et au parfum moins intense. La coloration de la p\u00e2te est \u00e9galement moins prononc\u00e9e et l\u2019affinage est plus pr\u00e9coce.<br \/>Les provinces de <strong>Mantoue<\/strong> et <strong>Plaisance<\/strong> se distinguent, par contre, par des cultures fourrag\u00e8res principalement compos\u00e9es de p\u00e2turages et de prairies, \u00e0 la fois stables et altern\u00e9s, caract\u00e9risant un fromage \u00e0 l&#8217;ar\u00f4me plus prononc\u00e9, au go\u00fbt plus intense et \u00e0 la plus forte r\u00e9sistance \u00e0 la maturation.<br \/>Les zones de collines dans les provinces de <strong>Vicence<\/strong> et de b, ou les provinces de <strong>Trente<\/strong> et <strong>Coni<\/strong>, situ\u00e9es au pied de la cha\u00eene alpine, sont riches en p\u00e2turages dans les collines et les montagnes o\u00f9 les prairies stables et les cultures spontan\u00e9es de gramin\u00e9es dominent la production de fromage. Ce type d\u2019alimentation conduit \u00e0 une production de Grana Padano AOP aux nuances olfactives plus riches, aux ar\u00f4mes plus intenses et plus vari\u00e9s et \u00e0 une p\u00e2te de couleur paille.<\/p>\n<p>[\/et_pb_accordion_item][et_pb_accordion_item title=&#8221;Les races bovines&#8221; _builder_version=&#8221;4.20.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221; open=&#8221;off&#8221;]<span>Enfin et surtout, les diff\u00e9rentes races de bovins produisant du lait destin\u00e9 au Grana Padano AOP sont un facteur de biodiversit\u00e9.<\/span><br \/>\n<span>Les deux races utilis\u00e9es sont la Frisonne italienne et la Brune Alpine, qui repr\u00e9sentent depuis de nombreuses d\u00e9cennies la tradition zootechnique et agricole de la zone de production du Grana Padano AOP.<\/span><\/p>\n<p><strong>Le Brune Alpine<\/strong><br \/>\nCette race bovine repr\u00e9sente la souche italienne de la Brune autochtone originaire de Suisse centrale, revitalis\u00e9e \u00e0 partir de la souche am\u00e9ricaine Brown Swiss. L&#8217;introduction de la Brune Alpine en Italie remonte au XVIe si\u00e8cle, mais son expansion devient bien d\u00e9finie vers 1850, touchant le versant sud des vall\u00e9es alpines et s&#8217;\u00e9tendant progressivement vers la plaine du P\u00f4. Dans les grandes fermes lombardes, d\u00e9j\u00e0 orient\u00e9es vers l&#8217;\u00e9levage de bovins laitiers, elle a commenc\u00e9 \u00e0 remplacer les populations bovines locales et un si\u00e8cle plus tard, avec pr\u00e8s de deux millions de t\u00eates, la race Brune a repr\u00e9sent\u00e9 le plus important b\u00e9tail laitier en Italie. De nos jours encore, cette race se distingue par sa constitution robuste, sa capacit\u00e9 d&#8217;adaptation \u00e0 un climat rude, sa long\u00e9vit\u00e9 et son aptitude \u00e0 produire une quantit\u00e9 de lait importante et constante, \u00e0 teneur \u00e9lev\u00e9e en mati\u00e8res grasses et en prot\u00e9ines.<\/p>\n<p><strong>La Frisonne italienne<\/strong><br \/>\nLa race Frisonne \u00e9lev\u00e9e dans notre pays repr\u00e9sente la \u00ab souche \u00bb italienne de la race noire tachet\u00e9e ou Frisonne, dont la zone d&#8217;origine est la Frise n\u00e9erlandaise, de laquelle elle tire son nom, et qui est le r\u00e9sultat de l&#8217;introduction dans cette race de sang canadien et am\u00e9ricain. Les premi\u00e8res importations importantes ont eu lieu en 1920, mais c&#8217;est surtout apr\u00e8s la Seconde Guerre mondiale qu&#8217;elle s&#8217;est r\u00e9pandue dans les zones \u00e0 forte vocation fourrag\u00e8re comme la plaine du P\u00f4. Son caract\u00e8re cosmopolite a fait que des populations aux caract\u00e9ristiques particuli\u00e8res d\u00e9termin\u00e9es par les conditions environnementales particuli\u00e8res se sont cr\u00e9\u00e9es dans les diff\u00e9rents pays o\u00f9 elle a \u00e9t\u00e9 \u00e9lev\u00e9e. Gr\u00e2ce \u00e0 sa forte vocation laiti\u00e8re, \u00e0 sa forte constitution et \u00e0 sa pr\u00e9cocit\u00e9 pour la productivit\u00e9 et le d\u00e9veloppement, elle a fini par remplacer de nombreuses races locales, moins productives.
