La fonction de protection concerne la sauvegarde g\u00e9n\u00e9rale des int\u00e9r\u00eats du Grana Padano en tant que fromage \u00e0 Appellation d’Origine Prot\u00e9g\u00e9e.
\nElle comprend \u00e9galement la protection contre les abus, les actes de concurrence d\u00e9loyale, la contrefa\u00e7on, l\u2019utilisation abusive de l\u2019appellation ou d\u2019autres comportements illicites dans la production, la transformation et la commercialisation du Grana Padano.<\/p>\n

Respect du cahier des charges de production<\/strong>
\nDepuis 1996, le Grana Padano est un fromage \u00e0 Appellation d\u2019Origine Prot\u00e9g\u00e9e. En tant que tel, il doit respecter juridiquement les crit\u00e8res du cahier des charges de production \u00e9labor\u00e9 par le Consortium, qui codifie les proc\u00e9dures \u00e0 suivre tout au long du processus de transformation du lait jusqu’\u00e0 l’obtention du Grana Padano.
\n<\/strong><\/p>\n

Garantie de qualit\u00e9<\/strong>
\nL’objectif premier du Consortium dans le cadre de ses fonctions de protection est de garantir au consommateur un produit de grande qualit\u00e9 certifi\u00e9, charg\u00e9 d\u2019histoire, de typicit\u00e9 et de tradition. Contr\u00f4les sp\u00e9cifiques. Afin de s’assurer que chaque producteur respecte les r\u00e8gles \u00e9tablies dans le cahier des charges et que chaque meule de Grana Padano remplisse les crit\u00e8res requis, de nombreux contr\u00f4les et inspections sont effectu\u00e9s par le Consortium en collaboration avec un organisme externe agr\u00e9\u00e9, le CSQA actuellement.<\/p>\n

L’authenticit\u00e9 sans l’ombre d’un doute<\/strong>
\nLe Consortium de Protection du Grana Padano contr\u00f4le et supervise les producteurs, les affineurs, les conditionneurs de fromage r\u00e2p\u00e9, les conditionneurs de fromage en morceau et les points de vente afin de s’assurer \u00e0 tout moment que toutes les op\u00e9rations sont effectu\u00e9es dans les r\u00e8gles de l’art et ne portent pas pr\u00e9judice \u00e0 l’authenticit\u00e9 et \u00e0 la qualit\u00e9 du produit AOP.<\/p>\n

Lutte contre les d\u00e9lits<\/strong>
