hover_enabled=&#8221;0&#8243; global_colors_info=&#8221;{}&#8221; sticky_enabled=&#8221;0&#8243;]<\/p>\n<h3><strong>Grana Padano AOP 16-20 mois et Mostarda aux coings<\/strong><\/h3>\n<p>Il s\u2019agit de la reine des mostarde que les familles de Mantoue produisent depuis toujours.<br \/>\nElle a une texture plut\u00f4t croquante et une saveur intense ainsi qu\u2019une grande capacit\u00e9 \u00e0 absorber les huiles essentielles de moutarde, c\u2019est pourquoi il faut ouvrir le bocal une dizaine de minutes avant de la servir \u00e0 table pour la laisser respirer et en r\u00e9duire l\u2019intense ar\u00f4me piquant.<br \/>\nNous sugg\u00e9rons de l\u2019associer au Grana Padano 16-20 mois, mais elle se marie \u00e9galement bien avec des affinages de plus de 24 mois.<br \/>\nDans cet accord, on appr\u00e9cie la structure croquante du coing, qui s\u2019adapte et soutient la structure plus dure et plus granuleuse de ce type de fromage ; le piquant de la pr\u00e9paration est tr\u00e8s important, mais les deux produits se suivent n\u00e9anmoins agr\u00e9ablement, et l\u2019intensit\u00e9 du go\u00fbt de ce Grana Padano alterne avec celle de la mostarda, ce qui permet d\u2019appr\u00e9cier l\u2019un et l\u2019autre.\n<\/p>\n<p><strong>Le saviez-vous ? <\/strong><\/p>\n<ul>\n<li>Le coing (Cydonia oblunga) n\u2019appartient ni au pommier ni au poirier, mais constitue une esp\u00e8ce \u00e0 part enti\u00e8re. Il s\u2019agit en fait d\u2019esp\u00e8ces tr\u00e8s proches : elles appartiennent toutes \u00e0 la famille des Rosac\u00e9es et \u00e0 la sous-famille des Pomoideae dont le fruit (le pome) provient du r\u00e9ceptacle (la partie terminale \u00e9largie du p\u00e9doncule floral). Il s\u2019agit donc d\u2019un \u00ab faux fruit \u00bb, c\u2019est-\u00e0-dire d\u2019une structure qui ne provient pas du pistil (partie femelle de la fleur). L\u2019int\u00e9rieur de la pulpe pr\u00e9sente cinq loges cartilagineuses contenant les graines.<br \/>\nLa forme du fruit des diff\u00e9rentes vari\u00e9t\u00e9s de coings est souvent source de confusion, car elle peut ressembler \u00e0 celle du pommier ou du poirier. Le coing appartient certainement \u00e0 la cat\u00e9gorie des \u00ab fruits oubli\u00e9s \u00bb : cultiv\u00e9 depuis l\u2019Antiquit\u00e9 &#8211; ce n\u2019est pas un hasard si le nom botanique du genre d\u00e9rive du nom d\u2019une ville de la Gr\u00e8ce antique &#8211; il n\u2019a pas \u00e9t\u00e9 aussi r\u00e9pandu que d\u2019autres esp\u00e8ces fruiti\u00e8res. Les principales vari\u00e9t\u00e9s cultiv\u00e9es sont la Violina, la Marina di Chioggia ou le cultivar am\u00e9ricain dans la version locale d\u00e9di\u00e9e au commerce hors province. La vari\u00e9t\u00e9 la plus utilis\u00e9e aujourd\u2019hui dans la r\u00e9gion de Mantoue est l\u2019ancienne version connue sous le nom de \u00ab Cappello del prete \u00bb ou la nouvelle version (du cultivar \u00ab Delica \u00bb), utilis\u00e9e en cuisine pour la pr\u00e9paration de soupes velout\u00e9es, sinon frite ou comme ingr\u00e9dient des c\u00e9l\u00e8bres \u00ab Tortelli di zucca alla mantovana \u00bb (Tortelli de courge \u00e0 la mode de Mantoue) ainsi que pour la fabrication de la mostarda \u00e0 la courge moutard\u00e9e.<br \/>\nL\u2019art de moutarder les l\u00e9gumes exige une dext\u00e9rit\u00e9 particuli\u00e8re et certaines familles mantouanes, encore aujourd\u2019hui d\u00e9positaires de cette technique, savent travailler la courge avec beaucoup d\u2019habilet\u00e9 et d\u2019excellence : c\u2019est un exemple unique qui, depuis des d\u00e9cennies, n\u2019est r\u00e9alis\u00e9 dans le monde de la mostarda qu\u2019\u00e0 Mantoue.<br \/>\nLa courge, apr\u00e8s avoir \u00e9t\u00e9 transform\u00e9e en mostarda, appara\u00eet d\u2019une couleur orange intense, coup\u00e9e en fines tranches ou en d\u00e9s, l\u00e9g\u00e8rement croquante avec un c\u0153ur tendre ; dans certains cas, on la m\u00e9lange \u00e9galement avec de la mostarda de pommes, mais on la trouve surtout pure. Elle se marie tr\u00e8s facilement avec le Grana Padano AOP affin\u00e9 entre 16 et 20 mois.
