Infatti i culurgiones sono un tradizionale tipo di pasta della Sardegna. Bellissimi nella forma, questi deliziosi fagottini di pasta sono normalmente ripieni di patate schiacciate, pecorino sardo, menta e scorza di limone, ma io ho deciso di giocare un po\u2019 con la tradizione per creare la mia versione di questa fantastica ricetta.<br \/>\nAnche qui il ripieno \u00e8 di patate, ma condito con olio d\u2019oliva e un mucchio di Grana Padano Riserva grattugiato, Oltre 20 mesi. Il formaggio a lunga stagionatura ha un sapore pi\u00f9 ricco e da una bella grinta al ripieno. Il condimento del piatto sar\u00e0 semplicemente una salsa di Grana Padano ricoperta da tartufo nero. Si tratta di una pasta senza uova con farina di grano duro, quindi richieder\u00e0 un po\u2019 pi\u00f9 di lavoro rispetto alla pasta fresca, ma niente di complicato. Lascia riposare avvolto nella pellicola per circa 30 minuti.<br \/>\nOra prepara il ripieno. Lessa le patate fino a renderle morbide.
