Retirar la carne y limpiar la cazuela con un pedazo de papel para absorber la grasa. Vertir 3-4 cucharadas de aceite de oliva, la cebolla, el apio y la zanahoria cortada en trozos grandes. Despu\u00e9s de dorar las verduras, volver a colocar la carne en el plato. Enharinar y enrollar cada pieza, luego cortarlas en trozos de 2 cm. Cuando est\u00e9n blandas, puedes darle diferentes formas a las lonchas de queso<\/span><\/h4>\n<h4>1. Elegir patatas \u00absucias\u00bb. Las mejores patatas son las de la monta\u00f1a, que son secas, almidonadas y no acuosas. Si son acuosas, necesitar\u00e1n m\u00e1s, lo que las hace duras y dif\u00edciles de digerir.<\/h4>\n<h4>2. Cocinar patatas: hervir (empezando con agua fr\u00eda) o, mejor a\u00fan, cocinar al vapor o en el microondas. Una vez cocidos, pelar inmediatamente. Triturar mientras est\u00e9n calientes. Disponer sobre una superficie de trabajo enharinada, salar y a\u00f1adir queso Grana Padano DOP rallado.<br \/>Empezar a mezclar con harina.<\/h4>\n<h4>3. \u00bfCu\u00e1nta harina? Generalmente se calcula en base a 1 kg de patatas y unos 200-250 g de harina com\u00fan.<br \/>Una parte de la harina se puede reemplazar con almid\u00f3n o almid\u00f3n de ma\u00edz. En lugar de harina de trigo, tambi\u00e9n puede utilizar casta\u00f1as, trigo sarraceno o trigo duro.<br \/>Los \u00f1oquis se pueden colorear con tintes naturales, remolacha, espinacas o pur\u00e9 de calabaza. Y se pueden condimentar con hierbas y especias.<\/h4>\n<h4>4. Huevos: \u00bfs\u00ed o no? El huevo se usa para unir la mezcla y darle un sabor diferente. Sin embargo, como siempre, hay dos escuelas de pensamiento.<br \/>Algunos dicen que con huevo el sabor es demasiado distintivo, otros dicen que da una buena textura.<br \/>Si est\u00e1 dispuesto a agregar huevo a sus \u00f1oquis, aseg\u00farese de no agregarlos cuando las papas est\u00e9n calientes; en su lugar, agregar mientras amasa las papas y la harina, y tenga cuidado de ajustar la cantidad de harina utilizada.<\/h4>\n<h4>5. A la hora de hacer la masa, el amasado debe ser muy r\u00e1pido, y se aconseja probar la cocci\u00f3n de algunas piezas en agua hirviendo. Puede agregar harina f\u00e1cilmente, \u00a1mientras que es imposible quitarla!<\/h4>\n<h4>6. Darle crestas a los \u00f1oquis ayuda a absorber mejor la salsa. Se pueden enrollar sobre una superficie de madera estriada, con las tenazas de un tenedor o en el dorso de un rallador de queso (la parte m\u00e1s lisa), presionando suavemente. Cuando est\u00e9n listos, col\u00f3calos en bandejas enharinadas, dejando espacio a cada pieza a su alrededor.<\/h4>\n<h4>7. Si se desea hacerlos con anticipaci\u00f3n, es mejor congelarlos. Escaldarlos y escurrirlos, unos pocos a la vez, luego mezclarlos con un poco de aceite de oliva y congelarlos.
