Chef Stefano Del Moro began his career at the "Trattoria dall'Amelia" in Mestre (Venice) by Dino Boscarato, president of Italian sommeliers and subsequently of the world.

Under the guidance of chef Giancarlo Dalla Posta and then of Ettore Alzetta, he began his increasingly international journey.

After a first experience in London, Del Moro moved to Paris to the "Ristorante Carpaccio" with chef Giacomo Gallina and the advice of Angelo Paracucchi.

Later, Stefano Del Moro became chef of cuisine for a Japanese company of Italian restaurants and in 2002 he opened with chef Ezio Santin "the Antica Osteria del Ponte", in the center of Tokyo, of which he is now manager.
