Fig jam to be served with Grana Padano

Grana Padano works just as well on a cheese board as it does in cooking. This spicy, sweet fig jam is a brilliant flavour match for shards of Grana Padano and crisp, seeded crackers. Arrange on a platter to enjoy with pre-dinner drinks, or as a cheese course.


1.3 kg ripe figs, trimmed and quartered
750 g granulated sugar
4 fresh red chillies, trimmed and finely chopped
1 teaspoon dried chilli flakes (or to taste)
3 lemons, juiced
Crackers of your choice, to serve
Grana Padano, to serve


Mix everything together in a large pan, cover and leave for one hour. 
Place the pan on a high heat and bring to the boil. Remove the lid, turn down the heat to medium low, then simmer for 50 mins - 1 hour or until thickened.  
Decant into sterilised jars. When ready to serve, top crackers with a spoonful of the jam and shavings or chunks of Grana Padano.
