Salad with lamb’s lettuce, apricots, cashews, blueberries, mint and shavings of Grana Padano
Ingredients150 g lamb’s lettuce
100 g Grana Padano PDO in shavings
50 g salted cashews
100 g blueberries
1 bunch fresh mint
3 tablespoons extra virgin olive oil
1 pinch salt
ground black pepper
PreparationWash and dry the salad and place it in a large bowl.
Add the apricots, cut in quarters, the blueberries, mint leaves, cashews and shavings of Grana Padano. Dress with extra virgin olive oil and mix, season with salt and serve with a freshly ground black pepper, garnishing with shavings of Grana Padano.
