Canapés and mimosa cocktail for International Women’s Day
Ingredients8 slices sandwich bread
4 hard-boiled eggs
200 g Grana Padano
Preparation Cut out 8 round pieces of bread, one from each slice of sandwich bread, using a round biscuit-cutter.
Toast the bread in the oven and, in the meantime, shell the boiled eggs.
In a bowl, break the boiled eggs into large pieces, add the grated Grana Padano, a pinch of salt and ground pepper, and then mix.
Spread a tablespoon of mayonnaise on each canapé, followed by the Grana Padano and egg mixture and serve with a sprinkle of grated lemon rind and some chopped parsley. Serve the canapés with a Mimosa cocktail.
MIMOSA COCKTAIL75 ml brut spumante
75 ml orange juice
Pour the orange juice into a champagne glass, add the chilled spumante and garnish with a slice of orange.
