Ingredients

50g Grana Padano
4 cooked lasagne sheets
4 fried slices of aubergines
200g soft goats’ cheese
50g chopped Cantuccini (Cantuccini biscuits)
For the vinaigrette:
100ml tomato Passata
½ red onion
50 ml extra-virgin olive oil
50ml white balsamico
rocket salad for decoration
6 cherry tomatoes

Preparation

Layer the lasagne sheets with the aubergine slices, Prosciutto di San Daniele, goats’ cheese and Cantuccini. Roll them, sprinkle with some Grana Padano and bake in the oven at 200 C for 10 minutes.
For the vinaigrette:
Mix all ingredients to create a vinaigrette and add the quartered cherry tomatoes. Garnish with shaved Grana Padano and the rocket salad.Layer the lasagne sheets with the aubergine slices, Prosciutto di San Daniele, goats’ cheese and Cantuccini. Roll them, sprinkle with some Grana Padano and bake in the oven at 200 C for 10 minutes.
