Couscous with melon, avocado, mint, pine nuts and Grana Padano shavings
Ingredients200 g couscous
100 g Grana Padano PDO over 16 months
1 bunch fresh mint
1 bunch chives
1 tablespoon pine nuts
extra virgin olive oil
PreparationFollow the instructions on the package for couscous preparation.
Peal the avocado and dice it into small cubes, place in a bowl with lemon juice.
Slice the melon in half, discard the seeds and carve the pulp using the melon baller tool, then add the melon balls to the avocado.
Fluff the couscous and add it to the bowl, together with Grana Padano shavings, chopped chives, the pine nuts and a few mint leaves.
Season with extra virgin olive oil, salt and pepper and serve cold, adding Grana Padano shavings for decoration.
