It was here, amongst the rice paddies of Lombardy and Piedmont, that the art of cooking rice “all’onda” (waving) was born: creamy yet not liquid, firm yet not dry.

Rice arrived in Italy during the Middle Ages, thanks to trade with the East, but it was only in the Renaissance that it found its most authentic form: and so, the risotto was born.

In Milan, the legend of risotto alla milanese dates back to the 16th century, said to have been created almost by chance by a painter who, accustomed to using saffron to colour glass, decided to add it to the rice at a wedding banquet. It was an immediate success for both its colour and flavour!

We don’t know how much of this story is true, but what is certain is that since then, risotto has become an integral part of Italian tradition, often with a thousand regional variations, as is often the case: from Piedmontese red wine risotto to Venetian seafood risotto, to asparagus risotto in Emilia or cuttlefish ink risotto in Trieste.

Every area interprets it in its own way, but the philosophy remains the same: simple ingredients, precise technique, and so much love.

[/et_pb_text][/et_pb_column][/et_pb_row][et_pb_row disabled_on=”off|off|off” _builder_version=”4.27.4″ _module_preset=”default” max_width=”90%” custom_margin=”||15px||false|false” custom_padding=”||0px||false|false” locked=”off” global_colors_info=”{}”][et_pb_column type=”4_4″ _builder_version=”4.19.2″ _module_preset=”default” global_colors_info=”{}”][et_pb_text _builder_version=”4.27.4″ _module_preset=”default” text_font=”||||||||” custom_margin=”||0px||false|false” locked=”off” global_colors_info=”{}”][/et_pb_text][et_pb_text _builder_version=”4.27.4″ _module_preset=”default” text_font=”||||||||” custom_margin=”||0px||false|false” locked=”off” global_colors_info=”{}”]

The Preparation: A Slow Living Ritual

[/et_pb_text][et_pb_text _builder_version=”4.27.4″ _module_preset=”default” text_font=”||||||||” custom_padding=”20px||||false|false” global_colors_info=”{}”]

A good risotto starts with quality ingredients and slow movements—a traditional process deeply rooted in family recipe books, which we illustrate in these steps.

[/et_pb_text][et_pb_accordion open_toggle_text_color=”#0f0f0f” open_toggle_background_color=”RGBA(255,255,255,0)” closed_toggle_background_color=”RGBA(255,255,255,0)” toggle_icon=”3||divi||400″ icon_color=”#0f0f0f” use_icon_font_size=”on” icon_font_size=”44px” module_class=”pa-add-accordion-icon gp_accordian_item_main” _builder_version=”4.27.4″ _module_preset=”default” toggle_text_color=”#0f0f0f” toggle_font=”||||||||” toggle_font_size=”23px” toggle_line_height=”27px” body_font=”Merriweather||||||||” body_text_color=”#0f0f0f” body_font_size=”18px” body_line_height=”26px” border_width_all=”0px” border_width_top=”1px” border_color_top=”#0f0f0f” border_color_bottom=”#0f0f0f” locked=”off” global_colors_info=”{%22gcid-8696fd7e-29dd-4028-9d4d-981b208a53a9%22:%91%22border_color_top%22,%22border_color_bottom%22,%22icon_color%22%93}”][et_pb_accordion_item open=”on” _builder_version=”4.19.5″ _module_preset=”default” custom_css_main_element=”display:none” global_colors_info=”{}”][/et_pb_accordion_item][et_pb_accordion_item title=”Choosing the Right Rice” title_tablet=”Stuffed pasta” title_phone=”Stuffed pasta” title_last_edited=”off|desktop” _builder_version=”4.27.4″ _module_preset=”default” global_colors_info=”{}” open=”off”]

Choosing the rice for a risotto is no small matter.
