Here we are, at the heart of the big CABRE family. Today we are with Arturo Ginelli, the cheese factory\u2019s manager, and Ugo Ferrari, its quality manager.<\/span><\/p>\n

They take us straight to meet the head cheesemaker Fausto Bonvini.<\/span>
He tells us that the dairy has always been part of his life. He was born in a nearby dairy and now lives within the CABRE dairy..<\/span><\/p>\n

\u201cMaking cheese is my life. You know, my mum used to tell me that the first time I ever got weighed as a baby was on a cheese scale!!\u201d<\/em><\/strong><\/p>\n

He has been working here since 1980 and carries out the cheese production activities with a team of young cheesemakers.<\/span>It\u2019s hard work, but the young men are happy, and they are always on time.<\/span><\/p>\n

Ugo Ferrari tells us that the cooperative has always been especially concerned to have proper work shifts to allow workers to have free afternoons and Sundays off.<\/span><\/p>\n

After taking a look at the cheese production process, we go back to the offices where we are joined by the current president, Mr. Cavagnini, whose dairy farm in Manerbio is one of the cheese factory\u2019s milk suppliers. He tells us that back in the early 60s, the milk would be poured into iron churns when ready, and these were then collected by horse-drawn carts.<\/span><\/p>\n

\u201cMy family was the biggest supplier, and we produced 1 milk churn a day!
\nBack then, there were many small-scale milk suppliers. We used to have a great time waiting for the carts to come and collect the milk; we would meet up with other young people along the road and at last we could take a break, have a chat and enjoy a good laugh.\u201d<\/em>.<\/strong><\/p>\n

Milk trucks were introduced in the 80s but the churns, weighing some 50 kilos, still had to be emptied out by hand.<\/p>\n

\u201cI was a bit unlucky as I lived near the milk collector so I was the first on his round and the milk had to be ready in the middle of the night, at 2 a.m.\u201d<\/em><\/strong><\/p>\n

Arturo then takes us to see Giuseppe from Fattoria Cornetti, one of the dairy farms that supplies milk to CABRE.
\nHe rears Bianca Val Padana cattle, a breed that is almost extinct today.<\/p>\n

The breed was introduced in 2004 with 4 heads of cattle; today there are 250 pure-bred cows.\u201cIt\u2019s been hard work, but we are almost at 70-80% of the breed conversion stage.\u201d<\/em><\/strong><\/p>\n

He shows us the calves, he keeps them in pairs even though it makes the work more complicated, \u201cbut they are happy, and as soon as they\u2019ve drunk their milk they kiss and lick each other. I think they\u2019re spoilt!!!\u201d<\/em><\/strong><\/p>\n

He has given them imaginative names: from the names of politicians, \u201cthe more or less worthy ones\u201d,<\/em><\/strong> to the names of cartoon characters, biblical figures, invented names, and pseudonyms of people in the village, like Toro, Arco, Kennedy, Adam, Allan, Paco, Pesto, and so on.<\/p>\n

Before coming to this dairy farm he and his family lived through some very hard times.<\/p>\n

We lived in poverty, but with the dignity that is typical of the people of this land.\u201d<\/em><\/strong><\/p>\n

His father had gone to work as a railway employee to meet the family\u2019s financial needs.<\/p>\n

\u201cWith his first salary he covered the kitchen table with 50 thousand lira bills, and my grandfather was so moved that he couldn\u2019t hold back his tears.\u201d<\/em><\/strong><\/p>\n

The countryside needed income from sources other than the farm, and when his brothers also took other jobs they were able to invest money in it and take the business forward, always focussing on quality and the welfare of their cattle.<\/p>\n
